Wicklow Blue Cheese Pasta
Serves 2 or 3
- 450g pasta of choice
- 1 small onion
- 2 cups milk
- 50g walnuts
- 150g (small round of Wicklow Farmhouse blue brie cheese)
- 1tsp crushed garlic
- boil pasta as per introduction on pack
- dice onion, cube cheese, smash walnuts
- roast walnuts for approx 6 minutes @ 180dg
- heat pan with 1tbsp of oil
- add garlic and onion to pan and cook till golden brown
- pour in milk and add cubed cheese, bring to boil and let simmer for 3-4minutes
- strain pasta, keep 1tbsp of pasta water
- add pasta and tbsp of water to cheesey mix
- add toasted walnuts, keep some aside for the top of your dish
- serve with rest of toasted walnuts, some crushed black pepper and some parsley.
