Wicklow Blue Cheese Pasta

Wicklow Blue Cheese Pasta

Serves 2 or 3

  • 450g pasta of choice
  • 1 small onion
  • 2 cups milk
  • 50g walnuts
  • 150g (small round of Wicklow Farmhouse blue brie cheese)
  • 1tsp crushed garlic
  • boil pasta as per introduction on pack
  • dice onion, cube cheese, smash walnuts
  • roast walnuts for approx 6 minutes @ 180dg
  • heat pan with 1tbsp of oil
  • add garlic and onion to pan and cook till golden brown
  • pour in milk and add cubed cheese, bring to boil and let simmer for 3-4minutes
  • strain pasta, keep 1tbsp of pasta water
  • add pasta and tbsp of water to cheesey mix
  • add toasted walnuts, keep some aside for the top of your dish
  • serve with rest of toasted walnuts, some crushed black pepper and some parsley.
