Eazy Brie-zy Grilled Cheese Sambo
Serves 1
- 2 Slices of thick sourdough bread (or your favourite type!)
- 1 teaspoon of green pesto,
- 1 teaspoon garlic butter,
- 2 or 3 chopped sundried tomatoes,
- 2 or 3 slices of Wicklow bán,
- handful of shredded Wicklow Cheddar
- Butter the bread with garlic butter
- Spread pesto on one side
- Place cheddar, sliced tomato and brie on top of the pesto side
- Heat frying pan with butter and let it sizzle
- Place sambo in the middle of the pan and give it a little squish down, leave here for approx 1
-2 minutes - Flip it and leave for 1-2 minutes again
- Turn down heat and turn it back over, keep checking the sides till you get that golden colour you see in the picture and the cheese is melted inside. (You might need to take a little peek)
- Cut into triangles and enjoy!
