Baked Eggs
Serves 4-6
- 6 eggs
- 100ml milk
- 100g veg (or as much as you like), we used mangetout, baby corn, courgette, red onion, peppers and spinach
- 50g Nettle and chive cheese- grated
- Heat oven to 180dg
- Whisk eggs and milk together
- Add dash of salt and pepper
- Fry onion, pepper and courgette till onion is lightly browned
- Throw all veg and egg mix into a dish.
- Sprinkle cheese on top and bake for 30-40 minutes depending your oven.
