Baked Eggs

Serves 4-6

  • 6 eggs
  • 100ml milk
  • 100g veg (or as much as you like), we used mangetout, baby corn, courgette, red onion, peppers and spinach
  • 50g Nettle and chive cheese- grated
  • Heat oven to 180dg
  • Whisk eggs and milk together
  • Add dash of salt and pepper
  • Fry onion, pepper and courgette till onion is lightly browned
  • Throw all veg and egg mix into a dish.
  • Sprinkle cheese on top and bake for 30-40 minutes depending your oven.
